4 Layer Berry Delight

    My husbands godmother makes this dessert for all of their family get togethers. Every time we have one she brings it. I finally had to ask her for the recipe because it is absolutely addicting. I feel like I could eat the whole thing all by myself. I have made it once before for a dinner at my aunts and it was such a big hit, so for Easter Sunday I thought everyone else in my family should get to try it. Of course it was no surprise when there was none left to take home like I was hoping there would be. But I am very glad it was such a big hit. This is my new favorite dessert to make and its so easy!

What you will need:
  • 1 ( 9 or 10 ounce) angel food cake torn into cubes
  • 16 oz (2- 8oz packages) cream cheese softened
  • 5 oz can evaporated milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 (21oz) can blueberry pie filling
  • 8 oz container whip topping
  • Fresh strawberries sliced
   Line the bottom of a 9x13 inch baking dish with the angel food cake cubes. In a mixing bowl combine the cream cheese, evaporated milk, sugar, and vanilla, mix well. Pour over the cake cubes and chill for 15 minutes. Pour the blueberry pie filling over cream cheese mixture and chill for another 15 minutes. Spread the whipped topping over layers and top with sliced strawberries. Chill for 2 hours before serving.

Chocolate Quad

   This dessert has been in my family for so many years. My grandmother use to make it every year for christmas. And for a few years now this tradition has been mine to make  for christmas and other family functions. Its very easy and super delicious. This was our good friday treat after our yummy boiled crawfish.

What you will Need:

  • 1 cup flour
  • 1cup pecans chopped
  • 1 stick butter
  • 8oz cream cheese softened 
  • 1 cup powdered sugar
  • 3 packages instant chocolate pudding mix (I like to use devils food)
  • 3 cups cold milk
  • 2 containers cool whip
    Softened butter and combine with flour to make a dough. I usually add a few sprinkles of water to help it stick together. Add nuts and press into baking dish. Bake at 350 degrees for 15-20 minutes or until lightly brown. Let cool completely (I normally put it in ice box to help cool faster)
    In a mixing bowl combine cream cheese and 1 cup powdered sugar. Cream until fluffy. Add 1 container cool whip, mix and spoon onto cooled crust.
    Combine 3 packages pudding mix with 3 cups cold milk, combine until thick and spoon on top of cream cheese mixture. Top with extra cool whip and chill for 1- 2 hours before serving.

Home made Carrot Cake & Cream cheese Icing

  
 WOW this cake is fantastically great not to mention super simple. Another recipe from my aunt, she made it this weekend for one of her grand daughters birthday party. I have never tried carrot cake before and I tell you this is the best time to try is home made. It was all organic and completely delicious. I was a little skeptical at first, but as soon as I took a taste of that cream cheese icing I was hooked. I just had to have a piece! I have had this recipe for quite some time now and haven't tried it out yet. Needless to say next get together this will be the dessert to bring, as I am usually in charge of desserts. I hope you try and enjoy, it is definitely a must make!

Carrot Cake Ingredients 

  • 1-1/2 cup salad oil 
  • 1 teaspoon cinnamon
  • 1 cup chopped pecans
  • 2 cups flour
  • 2 cups grated carrots
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons baking soda

Mix oil, eggs, and salt. Add remaining ingredients. Bake at 350 degrees in greased and floured pan for 40 minutes or until toothpick inserted in middle comes out clean.

Cream Cheese Icing

  • 1 stick melted margarine
  • (1) 8oz package
  • 1/2 cup chopped pecans
  • 1 box sifted powdered sugar
  • 1 teaspoon vanilla
Mix all ingredients and spread on cooled cake.
